It’s FINALLY Fall! I’ve been pushing it with my sweaters and booties in 80 degree weather, but October has arrived and so has the cooler evening air! I don’t know about you, but I’m 100% ready for pumpkin patches, apple orchards, and evening hay rides.
We just got back from a week-long vacation to beautiful Topsail Island, NC (more to come on that trip) and I feel like I somehow missed the entire month of September! Like, we got back and BOOM… It’s full on fall. But hey, I’m not complaining! I guess it’s time to start dragging the Halloween decorations out too…
In the spirit of all things cozy and warm, I’ve done a quick roundup of my FAVORITE soup recipes for Fall! Soups are so easy, and can be thrown together to cook in a crock-pot all day (major convenience)!! I made a couple of soups last year, but I’ve made it my fall goal for one soup per week throughout October and November! I’ve got SO many recipes to try out, and that’s the only way I’ll get to taste all that goodness. There’s just something special about a warm cup of soup on a crisp fall evening. So cozy on up, and get your soup on!
So, first up, and on the menu for tonight is this yummy Olive Garden Copycat Zuppa Toscano Soup from Cooking Classy! I added some three-cheese tortellini just because I could.
Smoked Sausage, Kale, and Potato Soup from Diethood
Smoked sausage is a staple in my house. It’s so easy to throw in with some veggies and make the perfect meal! This time, it’s mixed with fresh kale greens and russet potatoes.
Slow Cooker Loaded Baked Potato Soup from Cooking Classy
This recipe puts a twist on your traditional potato soup with lots of goodies like shredded cheddar, bacon, and green onions! HELLLLLO loaded baked potato!
Chicken, Sweet Potato, and Kale Soup from Skinny Taste
This was a HUGE winner in my book last year! Even those who weren’t fans of sweet potatoes loved it! I made a HUGE crockpot full, and freezed the leftovers. It was super easy to heat up for a quick meal.
Grilled Chicken Tortilla Soup from Cooking Classy
Everybody loves a good taco, tortilla, or enchilada soup, and this one is packed full of fresh veggies!
White Bean and Ham Soup from Simply Recipes
This recipe reminds me of grandma’s home cooking. If it doesn’t have a ham hock in it, are you really even cooking…?
Asiago Roasted Garlic Cauliflower Soup from Closet Cooking
Cauliflower is still all the rage in creative cooking, so why not turn it into your new fall favorite?
Italian Wedding Soup from Good in the Simple
I’ve gone through plenty of cans of Campbell’s Italian Wedding Soup in my day, but something tells me this one will top them all! This was definitely my favorite soup as a child.
